Depending on what you have a higher ratio diff may be needed. If it's an Escort bach axle then a diff from a 1.3 model may do the trick - I suspect try it first would be a good idea before changing. As regards engine on carbs? Beyond my knowledge I'm afraid, but I'm aware that if it has an ECU at the moment that will probably need all the signals it had in the Focus (or dummies) or it won't work.
You may find some guidance by looking on "fast Ford" type forums, where peeps have changed to newer engines in old Fords.
