For a 250 swb convertible assuming you don't make any modifictions.

Strip Z3 and label wires 2 days
Fit sills, rear boot ledge and main bonnet 2 days
fit and gap bonnet 2 days
fit & gap boot 2 days
Fit & gap doors 5 days
Wiring 2 days

Finishing to paint standard.............forever!
Since my build I know Chris has modified the bonnet so you dont have to do the slice and the doors have been modified so again should be much quicker than mine.
It helps to order parts in a couple of weeks beforehand so you are not twiddling your thumbs wanting on bits. Do however be careful that you don't order them in too early if there is a fault they can be tricky to return.
I bought most of my parts in from EBay, print of the item details and put them in a file so if there is a problem you know where you ordered it from.
I was working outside so the weather can make a bug difference in how long things take, however if you look a Wozzy's rs200 build, if he can get that to paint stage in 10 days you should be able to finish a 250swb in a weekend.
So pull yer finger out and get started.

One thing I did find useful, the supermarket home delivery crates. They stack so don't take up too much room. Very useful to store and carry tools and parts from the garage to the project.
