I think you simply go for the minimum offset.
Eg I have 6.5j rims with a 43ET, but a 20mm spacer on the front, which brings the ET down to 23mm.
If you have 8" rims that will be about 3/4 inch wider (20mm) each side than yr existing 6" rims. I would not go wider or less offset as it may look good but you may get bump steer and there may be clearance probs ob full lock.
