Adrian Flux seems to be the standard first place to try. They are good at understanding why your car is different without fleecing you for the pleasure of it.

whats the age restrictions on these insurance companies?
when I insured my 360 replica none of these would touch me as I was only 18 so I had to insure it as an MR2 and tick just about every box on the list of modifications!

Im still only 24 so I might have to do this again if the age restriction is 25!

I was already with Adrian Flux, they mirrored my full no claims to another policy, cost me £194 fully comp limited to 5000 miles per year, but its always worth shopping around.
