Default 'Practical' kit car?

Hi, I'm new, please forgive me for being one of the many who treats spanners like wall-art.
I'm a novice when it comes to cars. I can maintain the basics, replace brake discs/pads on a honda jazz or old renault clio etc but thats about it.
My main question is simple.

If you had to build a practical family car where would you start?
Is it doable with a kit?

I don't suppose many 'replica' car companies have looked at halving the production cost of a kia cee'd or VW golf.

Anyways, theres the dilemma

Debate at leisure.
